The selection of the type of food and food trucks was entrusted to Michele Crippa, teacher of the Street Food Academy, the first training school for operators in the street food sector in Italy, founded in 2016 within the public training consortium Forma Futuro di Parma. "Street food, in our country, is part of the cultural heritage and we wanted to choose 11 representatives of the culinary tradition and the ability to enhance quality local and non-local products for Wildays.” declared Michele Crippa. “Various criteria were applied in the selection. The food trucks will prepare dishes with different characteristics that will range from Parma and Italian traditions to international food trends. Another criterion was the aesthetic impact. The activities were also chosen based on the communicative ability to tell and tell oneself. All the trucks have very important stylistic characteristics, also to respect the vocation of Wildays and ensure that each kitchen on wheels expresses a philosophy consistent with the festival.
